Gluten Free Bread

If you have a gluten intolerance, it can be difficult to find foods that are safe. Following is a recipe for a basic gluten free sandwich bread that is super easy to make.

Ingredients
3 cups gluten free flour blend
(pre-bought or your own mix of brown or white rice flour, potato and tapioca flour or starch)
3 tablespoons sugar
2 teaspoons of instant yeast
1 1/2 teaspoons xanthan gum
(available in natural food stores and some major grocery chains)
1 1/2 teaspoons salt
4 tablespoons butter
3 eggs
1 cup milk

Instructions
Add the first five (dry) ingredients to a large mixing bowl and stir to combine.

Slowly whisk or beat in milk until it combines with the dry mix.

Add in the butter and mix until all ingredients are blended together.

Beat in the eggs one at a time until you have a smooth batter.

Cover the mixing bowl with a damp towel and let rise for about an hour.

Meanwhile, grease a loaf pan.

When the dough has finished rising, scrape down the sides of the bowl.

Scoop dough into the prepared loaf pan.

Cover with a sheet of greased plastic wrap and place loaf pan in a warm area for about an hour.

Preheat oven to 350 degrees fahrenheit.

When the dough has finished rising, place in the preheated oven and bake for 40 minutes or until the bread is golden brown.

Remove the bread from the oven and turn it out of the pan onto a cooling rack.
